In traditional times, some native cultures in Africa and the Americas used simple sun-drying methods to process their freshwater algae - but it is likely that a significant amount of the nutrition was lost in the process. If the algae were transported many miles after harvesting and before freezing, or if it were subjected to high heat during the processing, much of its valuable nutrition could easily be lost. Why Freeze Drying?There are two methods available for drying freshwater algae: spray drying, which can involve the use of high temperatures (5000F to 6000F) and freeze drying, which employs low temperatures (320F) and reduced air pressure (vacuum). Since freeze drying is by far the more expensive process, it was largely abandoned for processing algae - until Cell Tech's commitment to make available a product with all its essential qualities intact dictated its use.
